DIY Mayonnaise

We are still playing catch up with our chicken eggs after being gone for a week or so. They are overflowing on our kitchen counter so I whipped up some homemade mayo and whether they like it or not, everyone is getting egg salad sandwiches (with homemade mayo) in their lunch bags for the next little while.

DIY Mayonnaise

In a glass, ceramic or stainless steel mixing bowl beat eggs for 1 to 2 minutes or until thick. Add the lemon juice, salt, and mustard. Beat for 30 seconds more. Slowly add oil to mixture while beating the mixture constantly. After 1/3 to 1/2 cups of oil have been incorporated the sauce will thicken into a nice, heavy cream. Rest for a second if your hands are tired then add the remaining oil. Beat boiling water into the sauce and season to taste.

3 eggs

1 tbsp lemon juice

1/2 tsp salt

1/4 tsp mustard

1 1/2 to 2 1/4 cups olive oil

2 tbsp boiling water
